What it is
E968 is erythritol, a sugar alcohol produced by fermenting plant sugars (usually from corn).
Why it matters
The go-to bulking agent for stevia tabletop sweeteners. Also in sugar-free baked goods and "keto-friendly" products. ~70% as sweet as sugar with essentially zero calories.
