What it is
E524 is sodium hydroxide (caustic soda, lye), produced industrially by electrolysis of brine.
Why it matters
Acidity regulator and surface treatment. The shiny brown of soft pretzels comes from a brief E524 dip before baking. Also used in cocoa processing, olives (curing), and many cleaning products.
