What it is
E516 is calcium sulphate (gypsum), a mineral mined from natural deposits.
Why it matters
The other classic tofu coagulant (alongside E511 nigari). Also a firming agent, bread improver, calcium fortifier, and the brewing-water hardener that gives Burton-on-Trent pale ales their character.

Always vegan.
