What it is
E511 is magnesium chloride, a mineral salt. Recovered from seawater or mined from natural deposits.
Why it matters
The traditional coagulant for tofu (known as "nigari" in Japanese). Also a firming agent in canned vegetables and a magnesium fortifier.

Always vegan.
