What it is
E461 is methylcellulose, made by reacting plant cellulose with methyl chloride.
Why it matters
Forms heat-set gels (unlike most thickeners which set on cooling) — making it the key binder in many plant-based meat alternatives (Beyond Burger, Impossible Burger). Also in ice cream, sauces, and pharmaceutical tablets.
