What it is
E421 is mannitol, a sugar alcohol historically extracted from manna (the sap of certain ash trees) and seaweed; modern production by hydrogenation of fructose or microbial fermentation.
Why it matters
Used where sorbitol's sweetness is too high — in chewing gum, breath mints, dietetic foods, and pharmaceutical tablet coatings.
