E414 is gum arabic (acacia gum), the dried exudate from Acacia trees (mostly in Sudan and the wider Sahel).
Why it matters
Emulsifier and stabiliser in soft drinks (particularly the syrup base of colas), confectionery (gum drops), and decorative bakery icings.
