What it is
E413 is tragacanth gum, a dried polysaccharide exudate from the Astragalus shrub (Middle Eastern and Mediterranean).
Why it matters
Emulsifier and stabiliser in salad dressings, ice cream, and bakery icings. Also widely used in pharmaceutical compounding and decorative pastry work.

Always vegan.
