What it is
E412 is guar gum, a galactomannan extracted from the endosperm of the guar bean (Cyamopsis tetragonoloba), mostly grown in India and Pakistan.
Why it matters
Thickener and stabiliser. Common in gluten-free baked goods, ice cream, sauces, soups, salad dressings.
