What it is
E341 is mono-, di- and tricalcium phosphate, manufactured from phosphate rock + lime. Not to be confused with E542 (bone phosphate), which IS animal-derived.
Why it matters
Raising agent in baking powder, anti-caking agent, calcium fortifier in plant milks and cereals.
What to do
Always vegan. The mineral source is the key — phosphate rock, not bone.
