E338 is phosphoric acid, an inorganic acid produced from phosphate rock.
Why it matters
The acid in colas. Also used in jams, baking powders, processed cheese, and as an acidity regulator generally.
What to do
Always vegan. The phosphate salts (E339–E343) are likewise vegan.
