E331 — Sodium Citrates

What it is

E331 is the family of sodium citrates (mono-, di-, and tri-). Made by neutralising E330 citric acid with sodium hydroxide.

Why it matters

Emulsifying salt in processed cheese (and cheese alternatives), buffer in soft drinks, anticoagulant in some blood-derived products (which are obviously not vegan, but the additive itself is).

What to do

Always vegan.
