What it is
E211 is sodium benzoate, the sodium salt of benzoic acid (E210). Synthetic.
Why it matters
The most-used benzoate. In any acidic processed food: soft drinks, fruit juice, pickled vegetables, salad dressings. May form trace benzene in the presence of vitamin C — a separate health concern, not a vegan one.
