What it is

E161b is lutein, a yellow carotenoid pigment extracted from marigold flowers (Tagetes erecta) or, less commonly, from spinach and other green vegetables.

Why it matters

Used as a yellow food colourant in fats, oils, and some baked goods. Also widely used in eye-health supplements (where the source is the same — marigold extract).

Always vegan.
