What it is

E140 is chlorophyll, the green pigment extracted from nettles, spinach, grass, and other green plants. The closely-related E141 is chlorophyllin (copper complex), also plant-derived.

Why it matters

Gives the green to chewing gum, sweets, sauces, oils, and some dairy alternatives. Also widely used in cosmetics.

Always vegan.
